Fenugreek

From seed selection to processing and taste standardization, Natara offers unroasted and roasted grades to customers around the world. Our Fenugreek has nice sweet, maple and brown aromas, and is used for syrup flavours, sauces, marinades, beverages, sweet goods and nutritional products.

St John’s Bread

Also called Carob fruit, the story says St John the Baptist ate this fruit during time spent in the desert. The fruit is the by-product of the locust bean gum, and the tree itself is very drought and pest resistant, not requiring much water, and so it fits the hot climate of northern Africa and the South of Spain. The fruit is carefully selected for its taste, and Natara offers unroasted and roasted qualities. St John’s Bread is a very versatile extract that can be used in any brown flavours, including chocolate or vanilla as well as beverages and any other snacks and sweet applications.

Cocoa

Natara sources crude material from Africa to be processed in our UK and US facilities. Cocoa extract is one of the oldest product ranges in the company and we are proud of the unique taste we can deliver to our customers. We offer various grades of cocoa extracts from sweet chocolate to dark cocoa profiles. Cocoa has sweet and brown aromas and is used in sweet goods and beverages.

Coffee

Natara’s coffee beans are grown in South America, and we process Arabica and Robusta qualities in our UK and US facilities to cover a variety of tastes. Our coffee extracts comply with local regulations, including the EU standard of identity.

Chamomile

Also called “wild chamomile”, Natara sources chamomile from various regions to optimise harvest timing, quality, and cost. The extraction has a specific ratio of water and alcohol, to be able to extract the true taste of chamomile without going too deep into the botanical cell structure, and to pull the bitter components that you may find when overbrewing at home.

Oak Wood

The master of trees. The first thing to come to mind with oak wood may be wine and liquor barrel ageing, but oak can deliver so much more. The wood is harvested through a rigorous forest management process throughout the East coast of the US. It is cut and set to age in open air for a minimum of two years, for up to four years, to maturate. This stage is important to neutralise the ‘green’ taste. A unique process of toasting is followed by a hydroalcoholic extraction, to obtain a strong and balanced profile, to fit all types of applications.

Mountain Maple Bark

Maple syrup is widely known and used increasingly outside of the breakfast category. The product consumer home penetration rate is very high in North America, and widely popular in other parts of the world. Various grades are available depending on the taste profile target (woody or sweet forward). The bark is harvested during warm season in a non-destructive way for the tree; it is dried then extracted at low temperature. Our product is rich in tannins that have great antioxidant effect.

Kola Nut

Kola nut grows in hot climates. The two main producing regions are West Africa and Jamaica. It is widely used in Africa in religious celebrations and home infusions. Being wild harvested in forests on the West part of the Jamaican Island, we partnered with a local network of farmers through a coop thus adding value to non-cultivated land.

Grapefruit Mercaptan

Natara has been a leading manufacturer of Grapefruit Mercaptan for over 30 years. The product has an incredibly low odour threshold and is the chemical constituent primarily responsible for grapefruit aroma.

Sulfurol
